With the newborn in the house, meal prep is key to keep up with healthy eating style. This is the perfect muffin to make in advance and eat through out the week. This is a ‘healthier’ baked goods I can have when I’m craving something sweet. Because of the Kodiak mix I’m using, it has higher protein as well.
CHOCOLATE CHIP BANANA POWER MUFFIN
Perfect protein packed easy muffin recipe to meal prep!
Ingredients
- 2 ripe bananas
- 1 egg
- 1 cup almond milk or any milk
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- 2 cups Kodiak cake mix
- 1/3 cup chocolate chip
Instructions
- Preheat the oven to 350F degrees. Mix all the ingredients and bake in the oven for 18-20 minutes.
