This is spin off of my chewy brownie recipe. They still has the crackly top but rich and fudgy in the middle.
Microwave the sugar and butter mixture.
In a large microwave safe bowl, combine the melted butter and sugar. Microwave the mixture for 1 minute. Whisk until the mixture gets to a glossy finish. Using the microwave will help the sugar to melt all the way.
How to get the crackly top.
Beat in the eggs one at a time, whisking in between. Whisk until the mixture becomes fluffy and light in color, for about 2 minutes.
Fold in flour until just combined.
Be careful not to overmix. Overmixing the batter will cause the brownies to be more dense cake-like in texture.
Be careful not to overbake.
Be careful not to over bake the brownies. When you insert a toothpick into the middle, you’ll want the middle to still comes out with a bit of brownie batter on it. Brownies will continue to bake as they cool.
Easy Fudgy Brownie From Scratch
Ingredients
- 1 1/4 cups granulated sugar 250g
- 10 tbsp unsalted butter, melted 142g
- 2 eggs
- 3/4 cup cocoa powder 75g
- 1/4 tsp salt
- 1 tbsp corn starch
- 1 tsp vanilla extract
- 1/2 cup all purpose flour 63g
Instructions
- Preheat the oven to 350°F (180°C). Line an 9-inch square baking dish with parchment paper.
- In a large microwave safe bowl, combine the melted butter and sugar. Microwave the mixture for 1 minute. Whisk until the mixture gets to a glossy finish.
- Beat in the eggs one at a time, whisking in between. Whisk until the mixture becomes fluffy and light in color, for about 2 minutes.
- Add in cocoa powder, cornstarch, salt, and vanilla extract. Fold in flour until just combined.
- Pour the batter into prepared baking pan and bake for about 20 minutes.
