Super easy French toast casserole with crunchy cinnamon streusel on top! Make it ahead and refrigerate overnight and bake the next morning!
Ingredients
- 1/2 loaf of french bread
- 3 eggs
- 1/4 cup sugar
- 1/2 tbsp vanilla extract
- 1/2 tsp ground cinnamon
- 1 1/4 cups milk
Streusel topping
- 4 tbsp butter room temperature
- 1/4 cup 50g brown sugar
- 1/4 cup 32g flour
- 1/4 tsp cinnamon
- Pinch of salt
Instructions
- Grease the baking pan with butter. Tear the bread into chunks (or cut into cubes) and evenly distribute in the pan. Make the egg mixture by whisk together the egg, sugar, cinnamon, milk, and vanilla extract. Pour the egg mixture evenly over the bread. Cover the pan tightly and store in the fridge until overnight (or 2-3 hours)
- Make the streusel topping: Mix together the butter, brown sugar, flour, cinnamon and salt with a fork or pastry cutter. You can make this the day before as well and keep it in the fridge with the casserole dish.
- Preheat the oven to 350°F. Remove the casserole from the fridge and spring the topping over the top. Bake for 40-50 minutes for bread pudding texture. Bake for over an hour or so for more of a firmer texture.
