When I need to make cake for my friends – for get-together, birthday party, just for fun, or even HAWAII themed after wedding party – this was my go to. My friends and family loves this recipe. This is a bit naughty but my friends used to call this cake ‘bts cake.’ I guess it’s that good. That’s when they didn’t know the real name of this cake. I told them please don’t ruin this beautiful white wedding cake by calling it that. haha
Anyways… the recipe I’m sharing is making the whole cake from scratch. You can make this easy by just using store bought cake mix, cool whip from the freezer section, and a pudding. But if you want to make it extra special, make sure to use this recipe for more delicacy and love.
Hawaiian Wedding Cake
Equipment
- 22x32cm pan
Ingredients
- 6 eggs
- 180 g granulated sugar
- 180 g cake flour
- 60 g unsalted butter melted
- 96 g pudding mix
- 2 cups milk
- 2 cups heavy cream
- ¼ cup granulated sugar
- 1 tsp vanilla extract
Instructions
- Line the pan and preheat the oven to 340 F.
- Beat the eggs and add sugar. Place it over hot water and mix well. Once the egg and sugar mixture is warmed up to body temperature, remove from hot water and beat on high speed until the mixture turns white and fluffy.
- Sift in the flour to the egg mixture and fold in carefully. Then add meted butter and fold in.
- Pour the batter in the the lined pan and bake for 20 minutes. Let it cool completely.
- While waiting for the cake to cool, make the pudding by following the instruction on the box. Also make whipped cream using heavy cream (and sugar if needed).
- Spread the pudding over cooled cake first. Then, add whipped cream. Sprinkle some coconut flakes and garnish with pineapple chunks.
Notes
If you like more pineapple, I often mix in crushed pineapple to the pudding and spread it out so you get pineapple in every bite.
