I was with my in-laws to enjoy the last bit of summer a few weeks ago. We had this amazing salmon bowl topped with fresh mango avocado salsa. So I had to give it a try and make my own version of it!
Brown sugar along with bunch of seasoning makes salmon so delicious. Pair this with freshly made mango avocado salsa?! Yummm- it tastes amazing! Mango in this salsa adds sweetness to the dish, avocado gives the creaminess, and red onion gives just enough kick!
Salmon bowl with Mango Avocado Salsa
Delicious oven-baked salmon topped with homemade fresh mango avocado salsa.
Ingredients
- 1 lb salmon
- 1/2 tbsp brown sugar
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp ground paprika
- 1/4 tsp chili powder
- 1/4 tsp salt
- 1 tbsp olive oil
- rice
- mango avoado salsa see below for recipe
Instructions
- Prepare the sheet pan with parchment paper or foil. Place salmon, skin side down.
- Mix brown sugar, onion powder, garlic powder, ground paprika, chili powder, salt and olive oil together. Spread the paste on top of the salmon and bake at 475 degrees F oven about 15 minutes or until cooked through.
- Assemble to bowl with rice, salmon and mango avocado salsa.
Mango Avocado Salsa
Ingredients
- 1 mango diced
- 1/2 avocado diced
- 1/4 cup cilantro
- 1/4 cup red onion diced
- 1 jalapeno or Serrano pepper, diced
- 1/2 tbsp honey
- Juice from 1/2 lime
Instructions
- Mix everything together and enjoy with chips or amazing paired with over-baked salmon!
