Simple homemade dinner roll recipe with a soft and fluffy texture.
This is such an easy recipe to make for special holidays or, honestly, any days because it’s that easy! I used to get super nervous about making yeast related things, but this is so easy that you can’t mess up. Most importantly, you can make it ahead of time.
If you are using instant yeast, just dump all the ingredients in a mixing bowl. No need to let it ‘proof’ with warm liquid mixture. I personally used all-purpose flour but you can use bread flour too. Bread flour will give a ‘fluffier’ texture but to be honest, I think it’s still soft and fluffy with all-purpose flour.
Soft and Fluffy Dinner Rolls

Ingredients
- 1 cup warm milk
- 1/4 cup warm water
- 2 1/4 tsp 1 packet active yeast
- 1 tbsp unsalted butter melted
- 2 large eggs room temperature
- 2 tbsp granulated sugar
- 1 tsp fine salt
- 4 1/2 cups 572g all-purpose flour or bread flour
- 1 egg lightly beaten for egg wash
- Melted butter
Instructions
- Combine the warm water and milk (about 110°F) and sprinkle the yeast. Allow to proof for 5-10 minutes or until foamy.
- Combine the melted butter, eggs, sugar, salt and milk mixture in the bowl of a stand mixer. Add 2 cups of flour and stir in using a wooden spoon. Once incorporated, Attach the dough hook to the mixer and gradually add the rest of the flour while mixing in medium-low speed. Keep kneading until a smooth ball of dough is formed.
- Lightly oil a clean bowl and place the dough in the bowl. Cover with plastic wrap and dish towel. Let it rise for 1 hour or until the dough had doubled in size.
- Grease a 9×13 in pan with butter.
- Deflate the dough and divide into 12 equal pieces. Shape each into a ball and place in the greased pan. Cover the dough with plastic wrap and dish towel and let it proof until doubled in size.
- Preheat the oven to 375*F.
- Brush the rolls with the beaten egg. Bake the rolls for 18-20 minutes, or until golden brown. Once the warm rolls come out of the oven, brush with melted butter and serve warm.
Notes
Make ahead of time: Go ahead and do all the step up to shaping the rolls. Cover the shaped rolls and refrigerate for up to 24 hours. Once you are ready for the rolls, bring to room temperature before baking. If the rolls haven’t doubled in size, allow to rise in room temperature before baking.
