We’ve made Yukgaejang before on our YouTube channel. Yukgaejang is a spicy beef soup with bunch of different vegetables in it and I absolutely love it. This recipe is same Yukgaejang but this is with welsh onion. This is a big Korean green onion that almost looks like leek. If you can’t find welsh onion in the States, try replacing it with leek. It will be just as good!
Spicy Beef Soup with Welsh Onion (YukGaeJang)
Ingredients
- 300 g Beef brisket
- 4-5 stalks Welsh onion or leek or green onion
- 110 g Pyogo mushroom
- 160 g Oyster mushroom
- 120 g boiled dried sweet potato stalk
- 12 cups Water
- 3 tbsp Soy sauce for soup some for seasoning for beef
- 2 tbsp Fish sauce Seasoning for beef
- 2 tbsp Sesame oil Seasoning for beef
- 3-4 tbsp Red chili pepper powder Seasoning for beef
- 1 tbsp Minced Garlic Seasoning for beef
- 1 tbsp cooking wine Seasoning for beef
- Salt
- Pepper
- Red Chili Pepper For garnish
Instructions
- Soak beef in cold water to remove the blood.
- In a pot, add water and beef and let it boil until the meat turns tender.
- Chop the onion and white radish and to the cooking pot.
- While the meat is cooking, marinate boiled dried sweet potato stalk and mushrooms with soy sauce for soup and minced garlic.
- When the meat is cooked, take it out of the broth and shred to thin strips. Marinate the shredded meat using the seasoning mixture.
- Add all the rest of the ingredients to the broth including black pepper, fish sauce, rest of the soy sauce. Bring it to boil. Add more salt if needed.
