Pot Roast

Delicious pot roast recipe with made with red wine, onions, garlic, carrots, and potatoes make this super flavorful.

Ingredients
  

  • 2-3 lb chuck roast
  • Salt and pepper
  • Avocado oil
  • 1 tbsp minced garlic
  • 2 cups beef broth unsalted and fat free
  • 1 cup red wine
  • 3 small yellow onion
  • 1/2 lb baby carrots
  • 4 small yellow potatoes
  • 1 Garlic
  • 2 sprigs of fresh thyme

Instructions
 

  • Preheat the oven to 350°F.
  • Season the chuck roast with salt and pepper. Add avocado oil to the pot and sear the roast.
  • Remove the roast from the pot and set aside. Sauté minced garlic in the pot. Deglaze the pot with beef broth and red wine. Add the roast back to the pot.
  • Place the onions, carrots, and potatoes around the meat. Top it off with fresh sprig of thyme.
  • Place the lid on the pot and put it in the oven. Cook at 350°F for 3 hours. (Or let simmer 4-6 hours, covered)
