Instant pot is my new favorite cooking appliances. It makes everything so easy to make. Especially Korean food! Check out my spicy braised pork rib recipe. Since I made a spicy meal, I wanted to make something sweet this time.
So I decided to make Sweet Rice dessert. Something that usually takes time because you have to let the sweet rice soak for hours. But with instant pot, it’s easy! Just wash and put it in the pot with other ingredients. And all set!
Instant pot sweet rice dessert Yaksik
Korean dessert made with sweet rice, dried fruit, and nuts. Soft, sticky, and sweet dessert!
Ingredients
- 2 cups sweet rice
- 15 chestnuts
- 15 jujube
- 1 tbsp pine nuts
- 1 tbsp sesame oil for sauce
- 1/2 cup brown sugar for sauce
- 1 tbsp soy sauce for sauce
- 450 ml water for sauce
- 1 tsp salt for sauce
Instructions
- prepare the sweet rice by washing with cold water.
- In the instant pot, put all the ingredients for the sauce and cook for 5 minutes using saute mode.
- After cooking for 5 mintues, add sweet rice, cestnuts, jujube, and pine nuts and stir well.
- Close the valve to sealing and set to rice mode, high pressure, and cancel the keep warm mode.
- Once it’s cooked, wait for the pressure go out naturally.
