My new obsession is royal icing. I think royal icing is such a beautiful way to decorate sugar cookies. I’m not good at it yet but one day, I want to perfect my skill and do lots of variety of royal icing decor for each holiday/ special occasion.
I used my mom’s sugar cookie recipe on our Youtube channel. Our original video is from 4 years ago! So I decided to use this video and make some Christmas themed cookie. On my next post, I’ll share a sugar cookie decoration my mom did 4 years ago.
Sugar Cookie
Soft cut-out cookies perfect for royal icing decoration.
Ingredients
- 3 1/2 cups 530g all purpose flour
- 1 cup 226g unsalted butter (room temperature)
- 1 cup 200g sugar
- 2 eggs medium size, room temperature
- 1 tsp baking powder
- 1/8 tsp salt
- 1 tbsp vanilla extract
Instructions
- Beat the butter and sugar together on high speed until completely smooth and creamy.
- Mix in the eggs one at a time. Then add vanilla extract.
- In a different bowl, whisk the flour, baking powder, and salt together.
- Sift in the dry ingredients to the wet.
- Once the dough is formed, refrigerate for at least 4 hours.
- Once chilled, take the dough out. With a lightly floured rolling pin, roll the dough out to about 1/4-inch thickness.
- Place the cut-out cookies on the lined baking sheet and refrigerate again for about 10 minutes.
- Bake at 375F for 8-10 minutes or until lightly browned around the edges.
- Allow cookies to cool on the baking sheet for 5 minutes then transfer to a wire rack to cool completely before decorating.
Royal Icing
Classic easy royal icing made with meringue powder, perfect of cookie decoration
Ingredients
- 2 cups confectioner’s sugar
- 1 1/2 tbsp wilton meringue powder
- 2 1/2 tbsp + 1 tbsp warm water add more or less depending on the consistency
- 1 tsp lemon juice
Instructions
- Mix and sift confectioner’s sugar and Wilton meringue powder.
- Add lukewarm water and mix on low speed with a hand mixer.
- When the mixture is somewhat mixed together, and 1 more tbsp of lukewarm water and mix on high speed. Then add lemon juice.
- Put it in an air tight container. You can store unused royal icing in room temperature up to two weeks.
- Scoop the amount you need in a separate bowl and add more water until you get the desired consistency.
