I made this yellow cake for family birthday ‘party.’ But let’s me honest, I just needed the excuse to make this big cake. Ingredients are simple and it’s pretty easy to make.
I like to make it in advance and freeze the layers. Once they are frozen and ready to use, take the layers out of the freezer and frost the cake while it’s still frozen. Make the cake and put it in the fridge to thaw for 24 hours or so. I would also recommend taking the cake out of the fridge about an hour before serving. So for this video, I made the cake on Monday, frosted the cake on Friday, and had the ‘party’ on Saturday with the fam.
For the buttercream, obviously you can use whatever icing you like. For for classic birthday cake, I always see yellow cake and chocolate frosting. Added some sprinkles at the top and beautiful cake is done!
Yellow Cake
Ingredients
- 3 cups cake flour
- 2 tsp baking powder
- 1 1/2 tsp salt
- 1/2 tsp baking soda
- 1 cup butter room temperature
- 1/4 cup vegetable oil
- 1 cup sugar
- 5 egg yolks
- 2 eggs
- 1 tbsp vanilla extract
- 1 cup buttermilk
- Chocolate Frosting
Instructions
- Whisk together the cake flour, baking powder, salt, and baking soda in a bowl and set aside.
- In a separate bowl, cream the butter, oil, and sugar. Once the butter mixture turns very light and fluffy, add the eggs few at a time. Then beat in the vanilla extract.
- Add the dry ingredients and buttermilk to the butter mix alternating. Add about 1/3 of the flour mixture and mix in until the flour is gone. Then add half of the buttermilk, mix just until it is incorporated. Add the dry ingredients in 2 parts, alternating with the remaining buttermilk.
- Divide the batter into two prepared 9 inch pans and bake for 30-35minutes at 350F.
